American biochemist who, together with Stanford Moore and Christian B. Anfinsen, used to be a cowinner of the Nobel Prizefor Chemistry in 1972 for their research of the composition and functioning of the pancreatic enzyme ribonuclease.With Moore, who was his colleague at the Rockefeller Institute, Stein between 1949 and 1963 deciphered how ribonuclease catalyzes the digestion of meals. The two men developed methods for the diagnosis of amino acids and peptides received from proteins, after which they utilized these methods to determine the structure of ribonuclease. The same yr they have been awarded the Nobel Prize, Stein and Moore worked out the entire sequence of deoxyribonuclease, a molecule twice as complicated as ribonuclease.
